1 bell pepper, cut into 1/4″ rings

Heat a drizzle of olive oil in a skillet over medium heat. Then place the bell
pepper rings in the skillet and let sauté for about 2 minutes. Flip the ring and
crack and egg in the middle of it. Sprinkle some salt and pepper and cook to your
liking. Within the last minute of cooking, sprinkle the cheese on top to let it melt.
Garnish with chives and parsley.

Peanut Butter, Banana & Blueberry Waffles

Roasted Bananas
2 ripe bananas
1 tbsp coconut sugar
tsp ground cinnamon
1 pinch nutmeg
Waffles
1 cup all-purpose flour
½ cup whole wheat flour
1 tbsp baking powder
½ tsp kosher salt
tsp ground cinnamon
¼ cup peanut butter
2 tbsp coconut sugar
1 ¼ cups skim milk
1 tsp apple cider vinegar
2 roasted bananas
cup fresh blueberries
Maple Peanut Butter Topping
½ cup smooth peanut butter
1 tbsp water
cup maple syrup

Preheat the oven to 400⁰F. Prepare a baking sheet by lining it with parchment paper. Then peel and cut the bananas in half lengthwise. Line halves up on the baking sheet, cut side up.

Sprinkle the sugar and spices evenly over the bananas. Then bake at 400⁰F until the bananas are caramelized, about 15 minutes.

Prepare the topping by whisking together the peanut butter, water, and maple syrup until smooth.

Prepare the waffles: Preheat the waffle iron. Then whisk together the flour, baking powder, and salt in a medium-sized bowl or large measuring cup.

Whisk together the peanut butter, sugar, milk, and vinegar in a separate bowl. Then mash the roasted bananas into the wet mixture until evenly combined. Lightly coat the preheated waffle iron with butter, then spoon about ¼ cup of the batter onto the iron, and close and cook until both sides of the waffle are golden brown, about 2 minutes per side.

Repeat the above steps until there is no longer any batter. Keep finished waffles warm in the oven until ready to serve. Then serve with the maple peanut butter topping and fresh blueberries.
